Sauces
Sauces are aromatic and tasty seasoning of a big assortment of dishes.
Sauces can be prepared in different ways: hot, cold, sour, sweet.
Hot sauce consists of a stock, sour cream, cream, milk, vegetable and
mushroom stock, fat, oil, vinegar and sour wine and also tomatoes, tomato
puree, carrots, parsley, onions, wheat flour and so on. Hot sauces are often
served for meat and fish dishes. Hot sauce for meat dishes is based on meat
stock and for fish dishes – on fish stock.
For cold sauce – mayonnaise you have to take oil, yolks of fresh eggs,
prepared mustard, lemon juice or vinegar, salt, pepper and sugar. Cold sauce is
served to cold dishes.
Sweet sauce is cooked from fruit, sugar, potato flour, water or milk.
