COFFE SERVICE
1.     On board the passenger liners espresso is not just "a small cup of coffee", it is the symbol of Italianity. How to make a good espresso? Coffee making is an art!
    Use only the hot cups.
    Coffee must run out slowly and constantly. If it is running too fast, you probably did not put enough coffee or the pressure in the machine in not good. If it is dropping too slowly, you have probably put too much coffee, or the filters need cleaning.
    Coffee handle and the filters must be cleaned often during the service, with an obligatory deep cleaning at the end of service.
2.     When a guest orders an espresso, remember to ask him how he wishes it:
regular espresso (1 /3 of the cup), ristretto (very short), poco lungo (1/2 of the cup), lungo (3/4 of the cup), machiatto with cold milk, machiatto with hot milk
3.     The secret of good cappucino lays in foam. How to make milk foam?
      Milk for cappuccino must be cold; hot milk doesn't foam;
      Never fill the milk jar more than a half; if you fill it too much, milk
      will stray all over;
      Before heating the milk, release one steam blast in the air: first blast
      is always full of water;
      Dip the pipe to the bottom of the jar. When the milk becomes hot, pull the pipe to the top to thicken the foam;
      A small trick: add few milliliters of cream into the cold milk - the foam will become very thick and rich.
4.     Coffee is served without a coaster, with a spoon on the plate under the cup handle. Serve always a dispenser with selection of sugars.

TEA SERVICE
1.     On board the passenger liners hot tea is served with true elegance.
      Serve an empty tea cup with its saucer and a spoon positioned on the side of cup handle. Serve a pot with boiling water and place it behind the cup on the right side;
      Serve a bowl with selection of white, brown and artificial sugar and place it next to the pot. Bring a dispenser with selection of tea and invite the guest to choose his favourite flavour; after he made his choice, take the bowl away;
      If the guest ordered his tea with milk, fill a small jug with fresh milk and place it next to dispenser with sugar;
      If the tea is ordered with lemon, stick few wedges of lemon with cocktail picks and serve them on a small plate;
      Offer to guest to fill his cup with water.
